Join Douglas Genovese, Executive Chef of the Square Café and formerly the Executive Sous Chef of The Pittsburgh Golf Club, for a French Bistro Cooking Series.
The Bistro series focuses on culinary fundamentals present in classical French Bistro cooking and how those fundamentals can be applied for the home-chef. Essential hot food preparation such as poaching, roasting, and sautéing are the focus of the series. Summary coverage will be given to basic methods for cool food and pastry. This will be a small, hands-on class that will provide ample opportunity for open discussion and questions. Each class will culminate with a three course dinner based on the techniques presented that evening and served with appropriate wine.
